One of My Favorite Breakfasts

English Muffin with Peanut Butter and a Nectarine

There are a couple of reasons this is absolutely one of my favorite breakfasts.  First, it’s easy.  Takes a couple minutes, looks pretty and it tastes great.  Second, anyone who knows me knows I LOVE PEANUT BUTTER!  Anything that has peanut butter on it is alright by me.  Basically, it’s just a toasted whole wheat english muffin and 1 TBSP of Simply Jiff (reduced sodium and sugar) peanut butter.  PB, has plenty of fat, but if you spread it on something warm, you use less and it still gets all over whatever you’re lathering with it (did I mention I LOVE peanut butter?).  Hence, a normal serving of PB is 2 tbsp, but I get away with using one.  The nectarine, for some reason, tastes particularly good with the english muffin and peanut butter to me, but this meal goes with any fruit you choose.  294 Calories and 10 grams of Fat (for those of you freaking out about the 10 grams…it’s really not that bad.  Depending on what  you weigh and what your weight loss goals are, you’re likely needing to consume at least 30 grams of fat per day, but if you are working out a lot and weigh a lot, it could be double that!)  Besides, never forget to get in a healthy amount of calories in the morning.  Starving yourself early in the day just leads to disaster later on.

Blueberry Cobbler

Guess I should start out by explaining the header.  This is…yes, BlueBerry Cobbler.  Mmmm!  We picked the berries yesterday at a local orchard.  Killed two birds with one stone….good food and found a way to spend social time with my family without eating out.  Looking for ways to redefine my social time.  Not totally non-food oriented, but it’s not eating out either.  This is a great recipe, anyway.  Portion sizes (4 servings still pictured above) did seem small at first, but actually, it was just the right amount.  Felt indulged but wasn’t left craving more either.  Pleasant suprise.  179 Calories…4 grams of Fat.

My Quest to Find for Yumdiood (Yummy Diet Food)

It’s simple really.  I’ve lost 7 pounds in 6 weeks.  I’ve got a hell of a long way to go….but I will not eat tasteless food!  So my mission is to try out as much as I possibly can, share the winners and losers with you, and wind up with both weight lost, and a healthy catalogue of yummy, tummy and eye pleasing foods.
